I wrote down a lot of the recipes when my extract wasn't very strong yet, so you 11 may need to put in a lot less than I wrote down 12 13 #### Vanilla Extract 14 - Ingredients 15 + 1-2 vanilla beans (more is better) 16 + 0.7 L bottle of vodka 17 - Instructions 18 + Slice vanilla beans in half and put into bottle 19 + Leave bottle for at least one month (preferably several), shaking occasionally 20 + Get drunk 21 22 #### Vanilla Sugar 23 - Ingredients 24 + 1 vanilla bean 25 + 500 g sugar 26 - Instructions 27 + Cut vanilla bean into small pieces 28 + Place in coffee grinder together with some sugar and grind until no large pieces remain 29 + Mix resulting powder with rest of sugar 30 + Note: The pieces of the vanilla bean may not let themselves be ground well since they are 31 usually moist still, so you may need to grind them as well as possible, wait for a 32 few days so the sugar can soak up the water, filter them out with a sieve, and then 33 grind them again 34 35 ### Pakistani/Indian 36 37 #### Barfi 38 - Ingredients 39 + 3 L milk (preferably raw) 40 + 2 pods green cardamom 41 + 10-11 Tbsp sugar 42 - Instructions 43 + Boil milk while stirring every few minutes until enough water has boiled away to turn it into a thick liquid. 44 + Add ground cardamom seeds and sugar. 45 + Note: only add sugar and cardamom near the very end (before it turns hard), or it will be more likely to burn. 46 + Continue simmering on very low flame until it is a thick mass - stir constantly to prevent it from burning. 47 + Pour into mold and let cool. 48 + Cut into squares (other shapes are lame). 49 50 #### Ras Malai 51 - Ingredients 52 + 2 L milk 53 + 5 Tbsp sugar 54 + 5 pods green cardamom 55 + Juice from 1 lemon 56 - Instructions 57 + Put 1 L milk each into two separate pots and start heating 58 + Keep one simmering to boil off some of the water while curdling the other one with the lemon juice when it boils 59 + Strain curdled milk through thin cloth, rinse with cold water, and try to squeeze out as much water as possible 60 + Form this into ~8-10 balls - it requires a lot of kneeding to get it smooth enough to form proper balls 61 + Boil these in water for ~5-10 minutes covered with a lid 62 + While they are boiling, add sugar and cardamom (ground) to the other milk 63 + Take the balls out of the water and add them to the sweetened milk 64 + Boil for a few minutes, then leave to cool and eventually refrigerate 65 66 #### Kulfi 67 - Ingredients 68 + 2 L milk 69 + 5-6 pods cardamom, ground 70 + 1/3 cup sugar 71 - Instructions 72 + Boil milk until it has about 1/3 of the original volume 73 + Add ground cardamom and sugar, stir well 74 + Freeze mixture after cooling to room temperature 75 76 ### Other 77 78 #### Magic Fudge 79 - Ingredients 80 + 1 can (~400 g) sweetened condensed milk 81 + ~140 g biscuits - "Butterkekse", broken into small pieces 82 + 6 Tbsp cocoa powder 83 + 3 Tbsp butter 84 - Instructions 85 + Heat condensed milk, butter, and cocoa powder 86 + Cook for ~6 minutes, or until it becomes stringy 87 + Quickly mix in broken biscuits and put into form 88 89 #### Sweet Milk Rice/Milchreis 90 - Ingredients 91 + 2-3 Tbsp Sugar 92 + Cinnamon - ~1/8 tsp (just sprinkle on top) 93 + 1 tsp Vanilla flavoring (adjust based on strength of extract) 94 + 1 cup Boiled rice 95 + 1.5-2 cups Milk (depending on whether rice is fresh or already dried out) 96 + Pinch salt 97 - Instructions 98 + Boil ingredients in pot and leave simmering for at least 10 minutes, or until it turns nicely thick 99 + May need to cover with lid for a while if rice is dried out 100 + Note: You can do this straight away with dry rice but may need to add more milk and leave it to soak longer 101 102 #### Chocolate/Vanilla Pudding 103 - Ingredients 104 + 1/4 cup cocoa and 1 tsp vanilla extract OR 2 Tbsp vanilla extract 105 + 1/4 cup sugar 106 + 3 cups milk 107 + 3-4 Tbsp cornstarch (3 is fine for normal eating, but you need more if you want it to be properly thick) 108 - Instructions 109 + Mix cocoa/vanilla, sugar, cornstarch, and a bit of milk in a bowl and set aside 110 + Note: mixing the sugar and cornstarch together well before adding milk helps avoid clumps 111 + Heat remaining milk until it starts boiling 112 + Slowly add the cocoa, sugar, and cornstarch mixture 113 + Keep boiling on low or medium heat for a few minutes, until it thickens 114 + Pour into bowl and leave to cool 115 116 #### Semolina Pudding 117 - Ingredients 142 + 1/4 cup sugar 143 + 3 cups milk 144 + 2 Tbsp cornstarch 145 + 2 Tbsp vanilla extract 146 - Instructions 147 + Same as vanilla pudding, just with less cornstarch 148 + Note: if you need it to cool down more quickly, cook everything with a little bit of milk 149 to make a really thick pudding, and then stir in the cold milk quickly - it may not 150 become as nice but it won't be boiling hot
