Banana Bread
- Ingredients
- 2/3 - 1 cup oil (~200-220g)
- 1 cup sugar (~200g)
- 4 cups flour (~600g)
- 4 tsp baking powder
- The original recipe said 1 1/2 tsp baking soda and 1/2 tsp baking powder,
but it also works to just use baking powder (it would probably also be fine
to use a bit less, but 4 tsp should work).
- 1 tsp salt
- 1.2kg mashed bananas
- This is only the weight of the mashed bananas, not including the peels. With
the peels included, I usually need around 2kg. The original recipe only used
around half as many bananas, but I like to use more. I once used even more
bananas, but at some point, the resulting cake just turned into a mushy mess.
- The bananas should ideally be a bit overripe so they aren't as hard anymore.
You can also use bananas that have brown spots already, as long as they
aren't actually moldy.
- 100-200g chocolate pieces (optional)
- You can leave away the chocolate or add even more depending on how unhealthy
you want to live and how much you want to support the chocolate industry.
- 4 eggs (optional)
- I usually leave the eggs away, although they may be necessary when using fewer
bananas, as is the case in the original recipe.
- Instructions
- Mix all ingredients except for flour and baking powder.
- The bananas can simply be mashed with a fork.

- Add flour and baking powder and mix well.
- Spread on tray (mine is around 30cm x 36cm, but you can also use a deeper tray
so the cake isn't as thin).

- Bake at 180C for around 1h.
