Apple Walnut Cake
- Ingredients
- 400g butter/margarine
- 400g sugar
- 750g flour
- 5 tsp baking powder
- 4 tsp cinnamon
- 200g walnuts, broken into smaller pieces
- I just break the walnut pieces with my hands, so they're still relatively
large, but you can also chop them into smaller pieces if you want.
- 1-1.4kg peeled apples in small pieces
- Before removing the peels and seeds, this was around 1.5-2kg in my experience.
- 6 eggs
- I have made a vegan version without eggs, but I used canned apples that
were softer, so I didn't have to add additional liquid. If fresh apples
are used, additional liquid is needed, although it may be possible to
just cook the apple pieces beforehand so they're softer.

- Instructions
- Peel apples, remove seeds, and cut into small pieces.
It's also possible to grate the apples (possibly even with peels?),
but I prefer to just cut them.

- Mix with butter/margarine (should be soft so it can be stirred together with the
other ingredients), sugar, and eggs.
- In the original recipe, the apples are only added at the end together with
the walnuts. That might be a better idea so the dough can be mixed properly
beforehand, but I always peel and cut the apples first since that takes a
long time, and I don't want to use a second bowl to hold the apple pieces
while making the dough.
- Add flour, baking powder, and cinnamon, and mix well.
- Add walnut pieces and mix well.

- Spread onto tray (mine is around 30cm x 36cm, but you can also use a deeper tray
so the cake isn't as thin).

- Bake on middle rung at 180C for around 60-70 min.
- Note: The original recipe said that the finished cake should first be stored for
two days to improve the taste, but I haven't really tried that.
